Abstract
Livestock products are one of the most important sources of protein in the diet of the people, and for this reason, over the past decades, its production has been on the rise as the population has increased. Livestock products, due to their roots in the agricultural sector in their supply chain, can be among the water products; For this reason, the analysis of water consumption in their production process with the aim of managing water consumption in water-scarce areas will be important. In this study, first, the situation of the provinces of the country, in terms of production of two important livestock products, including meat and milk, in a period of 10 years, between the years 1395-1385. Then, according to the standard water footprint instructions, the unit values of green, blue and gray water footprints in their production process were calculated. Finally, by preparing maps of spatial distribution of water footprints, the status of water resources consumption in different provinces and climatic regions of Iran in the production process of these two important products were compared. Examination of available statistics showed that the production of boneless red meat, from 377 thousand tons in 1385, with a slight increase to 379 thousand tons in 1395; And the amount of milk produced in this period, from 3.7 to 4.1 million tons per year. Despite a slight increase in production nationwide, the amount of meat produced in the super-arid climate zone, with the smallest share of the country's total renewable water, increased by more than 129 percent. Milk production also increased by 29% in the arid climate. Based on 10-year averages, the total amount of green, blue and gray water footprints in the boneless meat production process in the country is between 7203 to 35984 cubic meters per ton, and in the milk production process between 5359 to 19376 cubic meters per ton. It was variable. Fodder water footprint has always had the largest share in this total. The 10-year average of the total absolute amounts of water footprints in the process of red meat production in Iran was 1.95 billion cubic meters, of which about 72% was consumed in both arid and semi-arid climatic zones. However, the largest increase in total water consumption in this process during the research period occurred in the arid climate (250%). The 10-year average of the total amount of absolute water footprints in the milk production process in Iran was 26.85 billion cubic meters and about 88% of it was consumed in both arid and semi-arid climates. Also, the total water consumption in this process in these two climates has increased by 26%. According to the findings of this study, maintaining the current pattern of meat and milk production in Iran and its development process can endanger environmental sustainability by depleting water resources in low-water areas. And leave irreparable consequences.
