Abstract
This study was conducted to investigate the effects of chilling stress on the content of sugar, starch, polyphenol oxidase enzyme, and also the effects of chilling stress and nitrogen fertilizer management on two important cultivars of potato (Agria and Fontaneh) in two areas of Jolgeh Rokh and Fariman in two consecutive years and in four farm (including Mahdavi, Shariati, Razaghi and Khazaee farms) was carried out as a combined analysis in a randomized complete block design with three replications. To do this study, at first, minimum and maximum thermometers were installed in these farms and with the physiological zero of the appropriate planting date and the growth indices, yield and yield components were evaluated. After the prediction of cold occurrence, sugar and starch before and after cold were measured and then the polyphenol oxidase enzyme was measured at one stage when the tubers were filled and one stage after six months of storage. Also, the effect of cold stress on storage of stomachs and tubers was studied. Based on the results of combined analysis, there were significant differences between the two cropping years. In the first year, yield and growth indices such as CGR, RGR and TDM were higher than the second year. The highest tuber yield was achieved 40 t ha-1 from Agria cultivar in Mahdavi farm (Fariman) and the lowest tuber yield was 36 t ha-1 from the Fontaneh cultivar in Khazaee Farm (Jolgeh Rokh). Regardless of the different weather conditions in two years, among the studied farms, the Mahdavi located in Fariman showed the highest yield, yield components and growth indices and the Shariati farm in the same region was the second in terms of yield. In addition to yield, Agria cultivar in Mahdavi farm was superior in comparison with other treatments in terms of growth indices such as CGR and LAI. The amount of chlorophyll in the Mahdavi farm (Fariman) was highest in Agria cultivar, indicating the correct management of nitrogen fertilizer in this farm. The occurrence of cold stress, which is one of the climatic characteristics of both studied regions (Fariman and Jolgeh Rokh), has reduced the amount of starch and increased potato sugar, which is not desirable in terms of quality, especially in the food industry (chips). The activity level of polyphenol oxidase enzyme increased at the time of tubers filling and after 6 months of tubers storage in the warehouse. Over time, in the storage period, the amount of glucose in the tubers was increased and the amount of starch was reduced. Therefore, according to the results of this research, planting, harvesting, agronomic management methods for reducing cold stress such as using antifreeze compounds, proper planting depth, planting and fertilizer management, and the development of growth indices and, finally, reducing the impact of cold and increasing the number of tubers. It is also necessary to manage temperature, humidity and CO2 in the warehouse and, if possible, reduce the storage time.
