Abstract

In this study, salmonella contamination of traditional and pasteurized ice creams was determined in Zabol City. A total number of 120 samples, including 90 traditional and 30 Pasteurized ice cream were collected from 18 ice cream shops in 5 times, the weight of each samples were 60 grams and the samples were transported to the quality control laboratory of veterinary faculty, Zabol University by a flask containing ice. Microbiological tests were performed for detection of salmonella. And some parameters about to hygiene and quality of ice cream were collected by questionnaires. The questionnaire was included: name of confectionery or ice cream shops, ice cream shops address, the temperature at which ice cream is ready, the hygiene level of ice cream shops, the hygiene level of the foreman and other ice cream shop personnel and education foreman, etc. The Results was calculated by using SPSS software version 18 and chi-square test was used for statistical analysis. According to this Study, the prevalence of salmonella contamination in traditional and pasteurized ice creams in Zabol city was higher than national standards. Contamination of pasteurized ice creams to this bacteria can cause due to; incomplete Pasteurization, Weak personal hygiene and use of contaminated raw materials. The control of input raw materials, increase of Hygiene Productive place, proper pasteurization can cause reduction of contamination in the Pasteurization ice creams. And also proper transportation of raw materials especially milk, control of personal hygiene that are in contact with the product and control of the ice cream temperature, can cause reduction of contamination in the traditional ice creams.
