Abstract

Chicken meat is a good medium for growth of pathogenic bacteria such as Salmonella and Listeria species. The aim of this study was to determine the antimicrobial activity of two Lactic Acid Bacteria (LAB) (Lactobacillus sakei subsp. sakei PTCC 1712, Lactobacillus delbrueckiis subsp. bulgaricus PTCC 1737, and the combination of them (1:1) (105 cfu/g)), their Cell Free Supernatant (CFS) (1mL) and the combination of two CFS (1:1) against Salmonella enterica subsp. enterica PTCC 1709 and Listeria innocuous IBRC-M 10799 (103 cfu/g) in chicken meat slices. The samples were vacuumed-packaged and stored at 4°C. antimicrobial activity, survival of LAB`s, acidity, pH and water activity were measured after 0, 1, 10, 20 and 30 days. Results were analyzed in completely randomized model with factorial test and three replication. Comparison of means were performed by Duncan and turkey test for chemical and microbial data`s respectively. The results of this study showed that the highest percentage of inhibition (44-41%) in chicken meat slices contaminated with Salmonella enterica, was observed in samples inoculated with Lactobacillus sakei, Lactobacillus Delbrueckii and the combination of two LAB`s, Whereas in slices contaminated with Listeria innocuous, samples containing CFS of Lactobacillus sakei, CFS of Lactobacillus delbrueckiis and the combination of two CFS showed the most antilisterial effect (58-61%). Results from in-vivo experiments was followed by those from in-vitro experiments. During storage and in all samples Water activity was significantly increased (P˃0.05). The pH and acidity did not follow the same pattern.
