Abstract
Salmonella is the most important causes of food infection that can cause various complications in the digestive system. veal is known as one of the most important factors of transmission of salmonella infection in humans. In this study, to investigate the amount of salmonella contamination, 100 packaged veal samples from 10 active veal packing companies in Zahedan city were sampled under sterile conditions and cultured to isolate salmonella and the results were evaluated using PCR. In order to identify the typhoid of the isolated colonies as Salmonella genus and distinguish Typhimurium and Enteritidis species by using PCR-Multiplex method, InvA, STM, sdf genes were used in order specific to Salmonella genus, Typhimurium and Enteritidis species. In total, 4 samples (4%) were infected with Salmonella according to the result of microculture, based on the PCR test on the resulting isolates, 4 (4%) of the samples were diagnosed with Salmonella. Also, 4 (4%) From the samples, the patient was diagnosed with Salmonella Enteritidis, while none of the samples were isolated under Typhimurium species (0%).This study showed that the prevalence of Salmonella contamination in packaged veal It is not high in Zahedan packaging companies.
