Abstract
Food-borne diseases remain the most important issue in the world. Hundreds of millions of people are affected by food and waterborne diseases throughout the world. Meat, on the other hand, is one of the most important protein sources and it is classified as one of the most important foods due to the richness of valuable proteins and minerals and energy. Kabab koobideh is widely used as a meat dish that can be contaminated due to various causes, which can be found in dead bodies of animals and caused by microbial diseases during killing chain, or due to noncompliance with sanitary rules during the killing or preparation chain of Kabab koobideh could be created. This research was conducted to investigate the contamination of gril ground meat(Iranian kabab) in Escherichia coli in Zabol. At first, ninety-six samples of Kabab koobideh prepared from different parts of Zabol city were randomly collected and then completely sterilized and transferred to the laboratory. Specific and differential environments were used to detect Escherichia coli bacteria. First, they were taken to a Violet Red Bile Agar, and after twentyfour hours incubation at a temperature of 37.5 degree of santigrade, the results were examined, then we moved them in EMB and BGLB environments It was also transmitted to provide more reliable results, then to ensure the results of the tests, TSI, SIMON Citrate, MRVP and INDOL tests were performed on them. The results show that due to the non-observance of sanitary measures, the use of masks, hats and gloves in grill centers and even restaurants, and sometimes due to the selection of inappropriate and contaminated dead bodies of animals in these germs, increased the rate of contamination of kebabs and caused illness and poisoning They go back. And because the Coliforms are considered to be an indicator of water and food contamination, they will not be issued in the event of any excessive contamination.
